recipe: almond tofu

Here’s another recipe that will help you celebrate the lunar new year of the ox.  Almond Tofu is also known as almond jelly and is a popular dessert in Hong Kong as well as other Asian countries.  However you celebrate the new lunar year, whether it be with an authentic Chinese banquet or simply a cup-a-noodle, we hope it’s prosperous and full of luck.  Maybe you’ll even get a lucky red pocket.

1 can of evaporated milk

1/2 – 1 cup sugar

pure almond extract

1 package gelatin

1 cup water

1 can mixed fruit

In a bowl (the one you want to let the tofu set in) mix the evaporated milk and enough sugar to your preference; make it as sweet as you like.  Stir until the sugar is mostly dissolved. Add almond extract to taste.

In a saucepan, mix the water and gelatin together and bring to a boil.  Pour over the milk and sugar mixture until the sugar is completely dissolved.  Cover with a lid or plastic wrap and refrigerate for a few hours or overnight; until it’s to the consistency of jell-o.  Add the can of mixed fruit and serve in individual bowls.
