recipe: bran muffins

I love sharing recipes, especially those recipes that are cherished within each family.  This recipe is from a family that lived 5 houses up the street from me as a girl.  I know the last thing you want to do right now is turn on your oven in the summer heat, but you’ll definitely want to bookmark this bran muffin recipe for an upcoming breakfast.  They’re filling, have the perfect amount of sweetness, and they’re delicious with a bit of butter.

Oat Bran Muffins

1 cup milk
2 cups oat bran cereal, such as Cracklin’ Oat Bran
1¼ cup flour
¼ cup sugar
1 Tablespoon baking powder
¼ teaspoon salt
1 egg
3 Tablespoons oil

In a separate large bowl combine milk and cereal. Let sit for about 10 minutes until softened. Add egg and oil, mixing until well combined. Sift together flour, sugar, baking powder, and salt. Mix into milk and cereal mixture. Dallop into well greased muffin tin, filling about half full. Bake at 400° for 25 minutes.
