
Cucumbers are refreshing, crunchy, and delicious in salads, on sandwiches, and even sliced up with a bit of salt. There are many varieties, but this “exotic” variety is one that is a bit sweeter than the regular green variety you find at the grocery store. If homegrown, they’re perfect for biting into after only a short water rinse. Plus they’re pocket size, and who doesn’t love pocket size food?
A few things about the Lemon Cucumber:
They are shaped like small baseballs, varying in size
They can be grown in a large pot – perfect if you don’t have room for a garden
They are great fresh, and also pickle well
They grow very well in Utah
They don’t have much of the chemical that makes other cucumbers bitter and hard to digest
No, they don’t taste like lemons
They’re nutritionally low in calories but offer some dietary fiber
Add them to a salad, sandwich, or use as a garnish
Complement with dill weed, basil, parsley, mint, chervil or chives
Dip in some vinaigrette, or other dressing
Fill bright yellow shells with dips or creams
Or just enjoy straight off the vine
