recipe: sweet baby bacon carrots

If you are ever stumped on what to make as a side dish, look no further.  These carrots are amazing and everyone will be begging for more!  Who doesn’t love bacon? This recipe is so simple but the flavor is delicious and perfect to accompany any meal.  If you have a garden full of carrots, they would be perfect in this recipe, but I had baby carrots on hand, so that is what I used.

Sweet Baby Bacon Carrots

1 lb bag of baby carrots, sliced in half
6 slices of bacon, chopped
2 tablespoons brown sugar
1/2 teaspoon salt

Steam the carrots slightly (I use the ziplock steamer bags and cook for 10 minutes). Set aside. Cook bacon until crisp. DO NOT drain the fat, add the steamed carrots, brown sugar and salt. Cook for about 8-10 minutes until carrots have caramelized a bit. I like to sprinkle some parsley over the dish for color.  Serve!
