recipe: guacamole

September is halfway over and autumn has made its entrance with vibrant colors creeping down the mountain side, crisp autumn air, and some great football games.  How has your favorite team been faring?  If you have a football game get-together don’t forget the chips and dip; a favorite in all sports related gatherings. Why not whip up some guacamole for this weekend’s game?

guacamole

2 large avocados, mashed
1 roma tomato, chopped
1/3 cup cilantro, chopped
1 Anaheim pepper, minced
2 cloves garlic, slightly roasted and minced
juice and pulp of 1 lime
a pinch of ground chipotle pepper and black pepper
a dash of Tabasco Sauce
salt, to taste

In a small bowl, mush up the avocado with a fork.  Add the tomato, cilantro, Anaheim pepper, garlic and lime juice.  Combine well. Add ground chipotle pepper, adding more if desired; followed by salt and pepper, to taste.

You can also add red onion, some cumin powder, or anything else you like. Play with it, and have fun!

We added a lot more cilantro to our guac because we’re cilantro fans, if you’re aren’t, start with 1/4 cup instead of 1/3 cup and add more as desired.  Of course you can always opt it out entirely.
