recipe: homemade caramel sauce

September 8th, 2009 - by

As summer is coming to a close, you may want to throw some last of the summer ice cream parties.  I know I am!  Instead of buying store bought caramel sauce, make your own.  It is not as difficult as you might think. And once you make it from scratch, you will never buy caramel again. This is a simple recipe that has exquisite taste!  It tastes wonderful over ice cream, or even add it to brownies for a delicious treat.  Enjoy the last days of summer!! Caramel Sauce

1 cup granulated sugar
6 tablespoons butter
1/2 cup heavy whipping cream

Make sure you have a heavy-bottomed 2 or 3 quart pot to work with. You will also want to wear oven mitts, because the sugar gets extremely hot. This is a fast process so make sure you have your butter and cream measured and ready to go.

Heat the sugar on high heat. As it begins to melt, stir quickly with a wooden spoon. As soon as the sugar comes to a boil, stop stirring. As soon as the sugar crystals have melted, immediately add the butter to the pan. At this point, the sugar should be a dark amber color. Whisk until the butter is melted. Once the butter has melted take the pan off of the heat. Wait about 5 seconds and than slowly add the cream to the pan and whisk until it is incorporated. The butter and cream will foam up, this is why using a larger pan is essential. Whisk until the sauce is smooth. Let cool in the pan for 5 minutes and then pour into a glass jar. Cool to room temperature. Store in the refrigerator for up to 2 weeks. Warm before serving.
