I believe that pancakes are a work of art. I’ve been trying to master the art of pancakes my whole married life, which happens to be near a decade. I have finally found the perfect pancake recipe and they haven’t failed me yet! The perfect taste and texture and even better when you add fresh blueberries or sweet chocolate chips (my kids favorite). Perfect Pancakes
makes about 12 pancakes
1 1/2 cups all purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar
2 large eggs
1 1/4 cups milk
1 1/2 teaspoons vanilla extract
3 tablespoons butter, melted
In a large bowl, whisk together the flour, salt, baking powder and sugar. In a medium bowl, use a hand mixer and beat the eggs, milk and vanilla until light and foamy, about 2 minutes. Stir in the butter. Gently and quickly mix the wet ingredients into the dry ingredients.
Using a 1/4 cup measure, drop batter onto a lightly greased pan or griddle. Cook on one side until bubbles begin to form and then turn the pancakes and cook on the other side until brown. Turn over only once. Serve immediately.
