celebrate: christmas with dinner crepes

My father is from the Brittany region of France, where crepes where born.  So, every year as long as I can remember, for Christmas Day dinner we have these amazing dinner crepes with our meal!

For those of you who thought crepes were only for dessert, you are in for a great surprise!  The creamy ham, mushroom, and swiss filling is perfect!  Maybe it will become a favorite holiday dish for you too!

{ham, mushroom + swiss cheese dinner crepes}

Ingredients

about 20  Cooked crepes from your favorite crepe recipe, click here [just be sure to leave out the vanilla and sugar if you are using a dessert crepe recipe]

4 cups thinly sliced ham, cubed

1 cup diced onions

1 green pepper, diced small

1 tsp minced garlic

1 tbs butter

2-3 tsp flour

1 ½ cups half and half milk

1 cup shredded Swiss or Gruyere cheese

1 ½ cups sour cream

2 egg yolks

½ tsp sugar

½ tsp pepper [or to taste]

½ tsp salt [or to taste]

1 cup mushrooms thinly sliced or diced small.


Preparation:

Preheat oven to 300 degrees. Cut up cooked ham, set aside. Heat butter olive oil in a pot over medium to high heat. Sauté onions, garlic and green pepper. Turn heat down to medium low and add flour. Mix well. Then, add milk, sour cream, egg yolks, salt, pepper, and sugar; mix well. Add in the mushrooms, and ham; mix. Place good amount of mixture into the prepared crepes and roll them up setting them next to each other on a baking dish. Sprinkle shredded Swiss cheese over the top of the crepes. Place in oven at 300 degrees until the cheese melts on the top of the crepes.

serve immediately.

    Caroline, would it be just as delicious if I used Gruyere cheese instead of Swiss? These look yummy :)
