recipe: monster pancakes

This is a favorite breakfast dish in our home. It is easy and delicious; perfect for Christmas morning. Just throw the ingredients in a food processor or blender, bake, top with maple syrup/etc. and dig in. Of all the days of the year, this is the one you should relax and enjoy the most.

monster pancakes

6 eggs
1 cup flour
1 cup milk
1/2 – 1 teaspoon salt
5 Tablespoons margarine/butter

Melt margarine in 9×13 pan in oven. In food processor or blender mix eggs, flour, milk and salt. Pour carefully into pan trying to spread margarine or butter to the edge of pan and up and over. Bake at 450 degrees for 20 minutes.
