recipe: strawberry syrup

With the snow that we’ve been getting lately, it really feels like winter now.  I like the snow, and can handle some of it, but at heart, I think I’m a summertime girl.  And now that it’s so cold outside, I like to have little reminders of the warmer days.  It’s not uncommon for me to make a key lime pie in the dead of winter, just so I can have a little taste of summer in my kitchen.

So next time you are freezing and want to taste summer, try out this syrup that can be made any time of year.  No need for fresh strawberries – frozen ones work just fine with this recipe.  And even though the snow may be falling outside your window, it can feel like summertime inside!

Strawberry Syrup

Makes 2 1/4 cups

1 pint frozen strawberries, thawed
2 cups sugar
1/4 teaspoon lemon juice

Process the strawberries in a food processor until smooth.  Pour the puree through a wire strainer into a saucepan.  Discard the seeds.  Stir in the sugar and the juice and cook over low heat until the sugar dissolves.  Bring to a boil, reduce heat, then simmer for 5 minutes.  If froth forms on the top, skim it with a spoon.  Remove from the heat and cool.

Enjoy warm over pancakes, ice cream, or whatever your heart desires!
