recipe: saucepan oatmeal cookies

Have you ever had a craving for something sweet, but didn’t want to take the time to do anything elaborate?  When I have a sweet craving hit, I usually make up a batch of cookies.  Easy and fast.  But sometimes, I’m feeling really lazy.  I hand wash all the parts to my mixer, and sometimes that just feels like too much effort, so even cookies are out of the equation.  Until I found these cookies.  Made in a saucepan (that can go in the dishwasher!) on the stove, the dough comes together in a matter of minutes and you have cookies before you know it!  So on one of those lazy days that you just have to satisfy your sweet tooth, try out these cookies!

Saucepan Oatmeal Cookies

makes 48 cookies

active cooking time: 15 minutes
baking time: 6 minutes per batch

1 cup butter
1 cup granulated sugar
1 cup packed brown sugar
3 cups oats
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 well-beaten eggs
1/2 cup white chocolate chips
1/2 cup dried cranberries

Grease a cookie sheet; set aside. Preheat oven to 375F.

In a medium saucepan combine butter, granulated sugar, and brown sugar. Cook and stir over medium heat until melted. Remove from heat. Add oats, flour, baking powder, baking soda, and salt. Stir until combined. Add eggs; mix well. Stir in white chocolate chips and cranberries.

Drop batter by rounded teaspoons 3 inches apart on the prepared cookie sheet, stirring the batter often.

Bake for 6 to 7 minutes or until edges are firm. Cool on cookie sheet for 1 minute, then transfer to a wire rack to cool completely.

    In the directions it says to add coconut, how much? These look like yummy cookies. I will sub dried cherries for the cranberries. Can’t wait to make them. Thanks for great recipes.

    How much coconut do you add? I see it in the instructions but not in the ingredient list. This sounds amazing and I really want to make some. Thank yoU!

    I have fixed the recipe – the original recipe called for 1/2 cup coconut instead of the white chocolate chips and cranberries. I changed up the recipe, but forgot to change the directions! Sorry for the confusion!
