celebrate: happy st. patrick’s day!

I’m not Irish, but I love celebrating St. Patrick’s Day!  And by celebrating, I mean coloring all my food green.  When else can you get away with eating green eggs or green biscuits? 

Tonight, we will be having these green biscuits with our dinner.  What do you do to celebrate St. Patrick’s Day?

St. Patrick’s Day Biscuits

2 cups sifted flour
3 teaspoons baking powder
1 teaspoon salt
1/3 cup shortening
3/4 cup milk

Preheat oven to 425F.

In a bowl, combine the dry ingredients.  Cut in the shortening until the mixture resembles coarse meal.  Add milk; stir until blended.  Transfer dough to a lightly floured surface.  Add a little bit of green gel food coloring paste and knead lightly until the color is marbled through – 8 to 10 times.  Roll dough to 1/2 inch thickness.  Cut with a floured cutter.

Bake on an ungreased baking sheet for 10 – 12 minutes.
