We love making spring rolls when the weather heats up. We like trying different pairings of vegetables we’ve never had before, wrapping them up in a soft rice wrapper and dipped in our favorite sauces. We think the most important part of making fresh spring rolls is the sauce. I got a recipe for peanut sauce from a neighbor who has wonderful taste for fresh food. I made a few changes, according to my tastes and I hope if and when you try it, you will enjoy it maybe making your own changes as well.
Spring Rolls
rice wrappers
water
noodles, cooked (bean or rice)
tofu, shrimp or another meat
lettuce, shredded
bean sprouts
root vegetables, julienned (daikon, golden beet, turnip, carrots, etc.)
other vegetables you might like
herbs (sweet or thai basil, cilantro, mint)
Cook the shrimp or meat with a little oyster sauce, mae ploy, and hoisin sauce. Prep all the other ingredients.
Fill a round cake pan with water, soak each wrapper in the water until soft. Lay out on a plate, fill with noodles, herbs, and various vegetables. Roll up like a burrito, dip in sauce and enjoy!
Peanut sauce
adapted from shannon’s recipe
¼ cup creamy peanut butter
¼ cup chunky peanut butter
¼ cup tahini
1/3 cup soy sauce
1/3 cup rice vinegar
2 Tablespoons honey
1 Tablespoon mae ploy sauce
¼ – ½ teaspoon chili oil
2 – 3 cloves garlic, minced
the juice of half a lime
a few handfuls of fresh cilantro
Combine all ingredients in mini food processor, pulse until combined, thin with water, serve immediately.



We LOVE spring rolls, one of my favorite things (that and sushi). thanks for the peanut sauce recipe!! we’ve always bought it but I’m so excited to try making it, especially to our taste. I assume you can get mae ploy sauce and chili oil at Asian food stores?? I haven’t heard of either of those. excited to have another use for tahini which I use in my hummus.
jenny- yes! you can get mae ploy at your local asian store (we get ours at chao’s) and chili oil is available at most any grocer, in the asian section. <3
