recipe: sweet potato fries

We love sweet potatoes. Instead of making regular oven baked fries, we have always made them with sweet potatoes instead of yukon gold or russet. We love the taste and don’t mind the softer texture. There was once a week when we ate sweet potato fries with every meal, we couldn’t get enough! Make these for your next bar-b-que to pair with that hamburger, or maybe portabello burger?

The consistency of these potato fries are a bit softer than their often crispy and crunchy cousin, but the taste of sweet potato fries is fantastic. I add a little maple syrup to ours, but you are welcome to omit that and play with other seasonings like cayenne pepper, mustard, chipotle, etc.

baked sweet potato fries

a couple Tablespoons olive oil
1-2 teaspoons maple syrup (optional)
1/2 teaspoon salt
1/4 teaspoon white pepper
a few sage leaves, about 1 Tablespoon, finely chopped
1 large sweet potato, about 1 lb. peeled and cut into matchsticks

Combine the syrup, salt, pepper, oil and sage together. Dredge the potato matchsticks in oil mixture until evenly coated. Spread onto parchment lined baking sheet. Bake in 425 degree oven for about 25 – 30 minutes or until golden and soft.

We make a dipping sauce with mayo, bbq sauce and a drizzle of maple syrup. so. good.
