I just got back from a visit to the Betty Crocker kitchens, and what an exciting trip it was!! Although I am still coming off a sugar high, all I can think about is baking up some more of the treats we were able to bake and sample. One of the cookies we made while we were there were these Citrus-Kissed Fig Thumbprints. Not only were they super easy to make, but they were something a little bit different. I would have never thought to combine the fig and citrus before, but it worked together so well!
So next time you are craving a little something sweet, remember these cookies – you’ll be glad you did!
Citrus-Kissed Fig Thumbprints
slightly adapted from Betty Crocker
makes 48 cookies
1 pouch (1 lb 1.5 oz) sugar cookie mix
3 tablespoons all-purpose flour
1/2 cup butter, melted
1 teaspoon grated orange peel
1 teaspoon grated lemon peel
1/2 teaspoon vanilla
1 egg
1/3 cup fig preserves
coarse sugar
Preheat the oven to 375F.
In a large bowl, stir together the sugar cookie mix, flour, butter, orange peel, lemon peel, vanilla and egg. Roll the dough into 1-inch balls. Roll the balls in the coarse sugar to cover. Place the balls 2 inches apart on an ungreased cookie sheet. Make an indentation in the center of each cookie with your finger, the handle of a wooden spoon. Spoon 1/4 teaspoon fig preserves into the indentations.
Bake for 7 to 9 minutes or until they are light golden brown. Cool for 2 minutes before removing to a wire rack to cool.
