Some people collect stamps, and some collect coins. Me? I like to think of myself as a collector of recipes. I have more recipes right now than I’ll ever be able to try in a lifetime, but that doesn’t stop me from wanting more!
I would guess that 90% of the time, I’m trying a new recipe. So you know that when I do make something for a second time, it’s got to be really good. And if it’s a recipe I make over and over again – you KNOW it’s really good. These muffins – as humble and simple as they look, are one of my very favorite recipes and a recipe that I make very often. They are super simple, as muffins should be, and so delicious. In fact, I would even say that this is probably my husband’s favorite thing that I make!
Take a few extra minutes in the morning to try these muffins – you won’t be sorry!
Brown Sugar Muffins
1/2 cup butter, melted
1 cup brown sugar
1 egg
1 cup milk
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup nuts, optional
Preheat oven to 375F. Prepare 16 muffin tins.
Combine all ingredients and mix. Divide among the prepared muffin tins and bake in the preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean.

I just made these. So delicious! Whatever you do, do not, I repeat do not, make these in the small bite-size muffin tins. Unless, of course you have enough self control to not pop them in your mouth like potato chips!
