It was merely and hour before I needed to be at a christmas party with cookies in hand. I needed a cookie recipe. fast. I turned to my best friend’s family cookbook and found the cookie recipe I needed, a shortbread cookie that calls for seven ingredients everyone should have on hand. And for the record, no one should be without butter. ever. If you forgot that santa loves cookies when he visits your house on Christmas eve, and that Christmas eve is tonight, these just might save you from getting coal in that stocking of yours.

snowball cookies
from the kohl’s
2 cups all purpose or whole wheat pastry flour
1 Tablespoon vanilla extract
1/2 to 1 teaspoon ground cinnamon (optional)
1/4 teaspoon salt
1 cup chopped almonds or almond meal
1 cup butter or margarine
1/2 cup powdered sugar
Sift the dry ingredients, set aside. Cream together the butter and sugar until smooth. Add vanilla, then the dry ingredients. Roll out the dough with a bit of parchment on top until 1/8 inch thick. Cut out shapes, and bake on a cookie sheet in a preheated oven for about 10 minutes or until just browning on the sides. Remove from oven, and set each cookie in powdered sugar while still warm, set on cooling rack. Cover with powdered sugar again when cooled.
notes:
you can substitute the ground almonds with any chopped nut; try hazelnut, pecans or walnuts.
for snowballs: After making the dough, roll into balls and bake for 15 – 25 minutes. Roll in sugar when warm, and again after cooled.
to make these into thumbprint cookies: bake for 7 minutes, then with the back of a melon baller, make a small indent in the center of each cookie. Bake another 8 minutes, then remove from oven and while still warm, place a bit of frosting, chocolate, or jelly in the indentation, then sprinkle some chopped almonds on top. Allow to cool completely on a rack.
