We have been spending alot of time away from home this first week of summer playing in the sunshine and warm temperatures so our meals and snacks have been fresh, fast and easy peasy. I have made sure to keep snacks with me as often as I can when we’re out and about, simple trail mixes and snacks that I can prep and store days before, and when consumed don’t make too much of a mess. And because it’s so warm (and because I don’t like finding melted messes in the bottom of my toddler’s carseat) I make trail mixes with things that can stand the heat, at least until naptime.
We love “trail mixes” because they are super simple, and there’s no need for measuring. The guidelines we use when creating them are to include nuts, dried fruit, and a little unexpected treat.
pistachio trail mix
pistachios
dried cranberries
mini marshmallows
dried banana chips
coconut shards
Combine according to desired amounts. Store in airtight container.
other easy snacks we love on the road (and stationary):
- honey nut pretzel sammies
- bin bin crackers, sesame sticks, asian rice cracker mixes (bulk isle of grocery store)
- flavored rice cakes (these are a potential mess, fyi)
- fig bars other fruit and nut bars
- kettle corn and popcorn served in a favorite cup
- carrot sticks or apple slices with a small jar of peanut butter and a little bit of honey mixed in, and another jar of muesli or granola. instructions: take carrot stick, dip in pb, dip in granola, eat.
- fresh fruit and veg kept in a cooler:: melon cubes, grapes, apple slices, etc.
- pea hummus and veggie sticks (carrot, snap peas, bell peppers or pretzels) also kept in a cooler or eaten at home.
- ice water
