Need some recipes to use up that summer squash? We have been eating a lot of zucchini and pattypan squash in the forms of ratatouille, cakes, fritters, and cookies. This version is is a whole wheat cookie, gently sweet with a little spice.
summer squash oatmeal cookies
adapted from 101 cookbooks
1 cup whole wheat pastry flour
1 cup shredded summer squash
1 cup rolled oats
2/3 cup chopped nuts (any kind)
1/2 cup packed brown sugar or sucanat
1/2 cup olive oil or melted butter
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon cloves, nutmeg or pumpkin pie spice mix
1/2 teaspoon sea salt
Preheat oven to 375 degrees Fahrenheit.
Combine all ingredients in a mixer and mix well. Spoon into your hands and form a ball, then gently flatten on the cookie sheet. Bake for 10 to 12 minutes until golden, turn out onto a cooling rack.
