how to: make buttermilk

I know you’ve been there before – it’s Saturday morning, and you get a craving for pancakes.  But your favorite recipe calls for buttermilk, and there is none to be found in the fridge.  You don’t want to go to the store – it is a lazy Saturday morning, after all, but you really want pancakes.

Don’t fear!  Making a substitute for buttermilk is east as 1-2-3, and only takes minutes!!  All you need is 2 ingredients.  Milk, and either vinegar or lemon juice.

1 – add 1 tablespoon of either vinegar or lemon juice to the bottom of a liquid measuring cup.
2 – add enough milk to make 1 cup
3 – let the mixture sit for 5-10 minutes before using

That’s it!  The mixture will be a bit curdled, but just stir and you have a great buttermilk substitute.  I have used this method many, many times and have had great success every time.

    I’ve done this trick too, but I have to say, I really love keeping powdered buttermilk in the fridge! Never again will I throw away a carton of unused buttermilk :)
