I love birthdays. And seeing that today is my birthday, I thought I’d make a little treat to celebrate!!
Actually, I’ve been wanting an excuse to try these pancakes since I saw them in the August issue of Every Day with Rachael Ray. I’ve seen other cake batter pancakes online, but these were the first that I’ve seen that are just made out of cake!

I love July in Utah.
The holiday and celebration of Independence Day is prolonged with the celebration of Pioneer Day twenty days after the fourth. It means that flags, banners and firework stands are not taken down until the end of the month, and that celebrating with red white and blue food is not unusual, but rather festive. This is the breakfast we had Independence day morning, red white and blue in all the right ways. Continue reading “recipe: banana oat blueberry pancakes” »

The is going to be a lot barbecuing this holiday weekend for many of us. If you are still deciding what to serve your friends and families, and are sick of the go-to hamburger and hot dog option, you may want to give pork ribs a try.
Ribs are a great option for serving at your next barbecue, and they are actually quite easy to prepare.

I am celebrating the 4th of July on my blog this week by featuring 6 days of red, white and blue treats. And I couldn’t have a week of treats without some kind of ice cream! I LOVE ice cream sandwiches, so I thought it would be fun to create a version that would be perfect for the 4th. These are not only pretty, but they are pretty tasty, too!

Welcome June – and welcome National Candy Month!! A couple of years ago, my sister decided that she was going to go a whole year without buying or eating any store-bought candy. Anything made at home was fair game, but no picking up a Snickers bar at the checkout of the grocery store. I’ve thought about that a lot, and thought that it would be a fun challenge to undertake. Because really – who needs store-bought candy when you can make it at home??

When I first eliminated foods from my diet because the wee one had an obvious food allergy, the most motivating and reassuring thing was the community of neighbors and friends who were right there with me, helping me through the transition of figuring out what I could and couldn’t eat as well as what was actually enjoyable. People who had been acquaintances became good friends over shared stories and recipes. I have so many emails from them with a note of encouragement and a slew of new recipes. This is one of them. It’s a delicious summer salad, perfect for your memorial day (or any ol’ summer day) bbq or picnic. Continue reading “recipe: avocado and chiptole vegetable salad” »

Happy Cinco de Mayo friends!
I have a great enchilada recipe to share if you are still looking for something festive to feed your family tonight.
I love these enchiladas! The honey lime chicken really makes this dish! They are definitely my new “go-to” enchilada recipe. Give it a try tonight!
