test kitchen: pineapple & sweet potato chowder

Our new and unique recipe straight from the test kitchen this week is a definite keeper. The combination of pineapple and sweet potatoes in a rich chowder is unlike anything you have ever had before. Our biggest challenge was creating the perfect amount of spice to compliment the sweet flavors of the pineapple and coconut.  After a few rounds of getting it just right, we knew that we had created a winner. The originality and incredible flavor in this chowder qualifies it as one of our absolute favorites.

This week we will be creating the perfect soup to celebrate the upcoming holiday: Traditional Irish Stew.

test kitchen: french onion soup

This recipe required several different versions until we got it just right…and boy did we. I was not sold on this soup until the last revision…now I can’t wait to have a bowl for lunch tomorrow. We spent weeks altering the amount time we cooked the onions, trying different cheese varieties on the crouton, and getting the broth base perfectly balanced. We put a lot of “love” into this recipe and I think you will be able to tell. In addtion to a delcious bowl of full flavored soup, each serving will be topped with a heaping amount of asiago cheese and 2 croutons that have been toasted with olive oil and asiago as well. Valentines Day is the perfect excuse to have a classic bowl of French Onion soup. Stop by for a bowl at any of our locations this week and let us know what you think!

Cafe Zupas is hosting a recipe contest and we’re after your best recipes. Simply submit your best soup, salad or sandwich recipe by clicking on the Recipe Share link to the left. From there, click on Share Your Recipe and simply type in your signature dish. You can even upload a photo if you’d like. We’ll be taking your recipes to the Zupas test kitchen to determine a winner! The cook behind our favorite recipe will win a $100 gift card to Cafe Zupas in addition to their orignal recipe featured in all four of our restaurants.

This recipe came straight from one of our customers.  A few years ago we hosted a recipe contest and featured the recipe in our restaurants. (lucky for you we’re hosting another recipe contest!) A creamy Garden Chowder walked away as the winner right into all of our restaurants. This time around we took the recipe back to the test kitchen to do a few minor modifications.

When soup isn’t hitting the spot to warm you up on a cold day, why not try hot chocolate…with a twist! Mexican hot chocolate is one of my favorite winter treats. This indulgence includes semi-sweet chocolate, cinnamon, sugar and vanilla. Hot chocolate of this type is commonly sold in circular or hexagonal tablets which can be dissolved into hot milk, water or cream, then blended until the mixture develops a creamy froth. After weeks of taste testing and altering measurements, Zupas is launching 2 new Featured Soups at all of our locations for the month of November. We took our favorite seasonal ingredients, gave them a twist and came up with a Spiced Pumpkin Banana Soup & Curried Butternut Apple Soup. Each recipe is made up of the finest fresh ingredients paired with spices and herbs to compliment.

We had a successful week in the Zupas test kitchen.

Spiced Pumpkin Banana Soup: check
Butternut & Apple Curry Soup: check
White Bean & Chicken Chili: still tweaking

Unlike most restaurants, Zupas has an active test kitchen where new recipes are constantly being developed. It’s fresh ingredients meets exotic spices and innovative ideas. Stay tuned for weekly updates on what we’re cooking up in the Zupas test kitchen.

destination: NYC

I ventured to NYC this week for food business and made the most of eating my way through the city in 4 short days. A good friend and mentor took me to a restaurant he recently invested in and to put it plainly, the experience didn’t dissapoint. Nestled on a small street corner in the West Village, this quaint yet cool eatery seemed to capture the charm of NYC in a very “barnyard chic” fashion. I enjoyed a delicious Sangria Marinated Hanger Steak and French Fries (done right) dipped in a tangy cocktail sauce. The real star was my appetizer, Bacon Wrapped Scallops with Grits. Words couldn’t possibly do this dish justice.

My quick trip to New York also included an hour long visit to Dean & Deluca, Bouchon Bakery, and Pizza from Ray’s. Once again, NYC has manifested to me that whether it’s an eclectic sangria hanger steak, a simple slice of pizza, or a delicate pastry, this city is full of fabulous food.
