Because we have an active test kitchen at Café Zupas we are able to implement seasonal ingredients into our features recipes. Our new Spring Asparagus soup went through several revisions until we got it just right. We complimented the fresh flavor of the asparagus with a creamy texture and a variety of spring herbs.
A classic mirepoix of carrots, onions, and celery creates the perfect flavor foundation for the soup. The addition of the asparagus and herbs truly makes this recipe outstanding. Celebrate Spring with a bowl of our Spring Asparagus soup!
It’s not from New Mexico if it doesn’t have green chiles, and this White Bean & Chicken Chili is no exception. This soup made it’s debut on our original menu, now it’s back and just as delicious as ever as part of the World Tour. This soup is an innovative twist that incorporates green chiles, cumin, white beans, and chicken. This hearty meal is topped off perfectly with cheddar cheese and a dollop of sour cream to compliment the heat from the spices perfectly. We’ll be serving this soup now through May 12th.
It’s rare to find a Mulligatawny recipe at a local restaurant…we set out to bring you India in a bowl and we think you will be pleasantly surprised. From the spice combination to the silky consistency and texture, this soup is an experience all wrapped up into one bowl of soup.
You can find this featured recipe at any of our locations until April 28th. After you’ve tried it don’t forget to go and vote for it if you want to bring it back!
Our Salmon Chowder has been a hit in the test kitchen since its creation. Zupas employees love this recipe and have claimed it as one of their favorites. We’ve spent months perfecting just the right spice combination and creamy consistency. We tested 6 different types of salmon to find the perfect option to compliment this unique chowder.
Szia (sounds kind of like “see ya”) is Hungarian for “Hello!”, and that’s not the only thing we’re bringing in from Hungary. Our Eastern European Beef & Mushroom Goulash is patterned after a traditional Hungarian recipe. This hearty bowl of soup highlights flavors like paprika, onions, carrots, and peas. To finish the recipe off perfectly, we add a bit of sour cream for the perfect taste and texture. This soup has been a hit in the World Tour for years, and we’re happy to bring it back
We enjoy the opportunities we have to create recipes that coincide with a holiday. St. Patrick’s Day is known for wearing green, pinching and our favorite…Irish Stew. We worked on getting the ratio of potatoes, cabbage and vegetables just right to create this hearty recipe. It was important to us to implement as much authenticity in this classic Irish dish as possible. After a good amount of research (and taste testing) we came up with a Café Zupas version that is sure to please. Celebrate your St. Patrick’s Day with a bowl of our new Irish Stew.
This recipe exceeded our expectations from the start. OurItalian White Bean & Sausage is full of fresh vegetables and a variety of spices and herbs that come together to make a delicious bowl of soup.
We tested several different herb/spice combinations to get this soup just right. It was important to us that this soup was a hearty blend of white beans, sausage and fresh vegetables. We increased the amounts of all of these fresh ingredients to make it more substantial…this soup really is a whole meal wrapped up into 1 bowl.
