Over 3 years ago, I posted my first blog post here on the Cafe Zupas blog – for “Warm You Up” Chili.  And since then, I have tried and tested multiple other chili recipes.  Chili is one of those things that I just don’t get tired of trying over and over again!  And I’m at it again with this Beef, Bean & Vegetable Chili.

Fleur de Sel

As promised in last week’s plug for French gray sea salt (amazing stuff!) and how it enhances all your baking and cooking, here is a word or two about it’s daintier counterpart known as “fleur de sel”.  Fleur de sel, which means “flower of salt” in French, is known as the “caviar of salt” to many.  If you’ve ever tasted it, you’ll know why; it too will change how you feel about salt in general.  But don’t start thinking that the hand-harvested gray sea salt or fleur de sel  just for high-end cooks or that it’s expensive and uppity.  While fleur de sel can be a little spendier than the iodized stuff, a little goes a long way and the price difference is fairly minimal.  French gray sea salt is actually affordable if you buy it from the right source.  I typically pick mine up in France, but you can find it pretty easily online here in the States and for a great price too!  True story: I brought some to a friend of mine and she prepared dinner with the new gray sea salt.  Her 7-year-old son and husband now beg for it to be put into everything.  That’s how great it is!

Test Kitchen: Italian White Bean & Sausage Soup- Available Through March 3rd!

This recipe exceeded our expectations from the start. Our Italian White Bean & Sausage is full of fresh vegetables and a variety of spices and herbs that come together to make a delicious bowl of soup.

We tested several different herb/spice combinations to get this soup just right. It was important to us that this soup was a hearty blend of white beans, sausage and fresh vegetables. We increased the amounts of all of these fresh ingredients to make it more substantial…this soup really is a whole meal wrapped up into 1 bowl.

recipe: garlic chive butter

Something I love about the colder weather is using my oven, especially for simple loaves of my favorite bread. Sweet tea breads, hearty whole grain loaves, loaves that take over a day to create (which have a crumb and flavor that are incomparable). The best way to enjoy fresh slices of bread are still warm, with a little cheese and honey, or a favorite compound butter. This garlic and chive butter is when you need something savory, which is necessary after all those Valentine’s day treats.

Pineapple Mango Green Smoothie

Hi-it’s Maria from Two Peas and Their Pod. I am excited to be guest posting for Café Zupas today. I love starting my morning with a green smoothie. Sure, I appreciate the healthy fruits and vegetables that are in the smoothie, but I really love the taste. Green smoothies are delicious!  I never get tired of my green smoothies because I always mix up the ingredients. One of my new favorite recipes is this Pineapple Mango Green Smoothie. The pineapple and mango add a tropical twist to this refreshing smoothie. I also throw in half of a frozen banana, which keeps the smoothie nice and creamy. And yes, there is spinach in there, but I promise you can’t taste it. It magically mixes in with the other flavors. I used almond milk, but any milk will work in this recipe, so feel free to use your favorite. If you are looking for an easy and healthy breakfast or snack, give this Pineapple Mango Green Smoothie a try-it’s a winner!

Morning Scramble with Rainbow Chard and Feta

This scramble has fast become a favorite in our home recently.  In fact, I’ve made it 3 times already this week and no one is sick of it yet!  I’m a big chard fan and am always happy to discover another way to enjoy it and slip it into something I’m making for the kids.  Best enjoyed with a thick slab of toast and a tall glass of water–there’s nothing like starting off your day right!

French Onion Soup for Valentine’s Day

Back by popular demand. We spent weeks altering the amount time we cooked the onions, trying different cheese varieties on the crouton, and getting the broth base perfectly balanced. We put a lot of “love” into this recipe and we think you will be able to tell. In addition to a delicious bowl of full flavored soup, each serving will be topped with a heaping amount of asiago cheese and 2 croutons that have been toasted with olive oil and asiago as well. Valentine’s Day is the perfect excuse to have a classic bowl of French Onion soup. Stop by for a bowl at any of our locations this week and let us know what you think! I love petite bite size desserts when it comes to Valentine’s day, and of course they have to have something to do with chocolate. I am highlighting raspberries again this week, with a chocolate profiterole (aka cream puff) filled with vanilla ice cream and a quick blender raspberry sauce. recipe: arugula with roasted butternut squash and pomegranate

A beautiful salad is not only a show stopper at your table, but is also a great addition to a balanced meal.  Salads can be so versatile and there are endless combinations!  I even love to eat salad as a light lunch on busy days.

Pomegranates are such a beautiful fruit!  They are such an amazing color, and bring such a beautiful pop to your salad!  I love to pair interesting flavors.  For this salad I tried pomegranates with roasted butternut squash.  This combination isn’t one you would think of off hand as a great pair, but their flavors blended perfectly!

I put roasted butternut squash, pomegranate seeds, gorgonzola cheese, and toasted hazelnuts with a nice champagne vinaigrette over arugula.   A lovely combination!  Read more to see how to make this beautiful salad!  This could be a great addition to your romantic spread this Valentines Day!
