Cinco de Mayo is in a few days, and if you are still looking for a festive dish for the holiday, I have a great one to share!

These veggie tacos are a great light alternative to a regular taco, but they don’t lack in flavor!  They taste incredible, and the slight sweetness of the roasted butternut squash gives it a unique flavor!

Welcome to New Mexico!

It’s not from New Mexico if it doesn’t have green chiles, and this White Bean & Chicken Chili is no exception. This soup made it’s debut on our original menu, now it’s back and just as delicious as ever as part of the World Tour. This soup is an innovative twist that incorporates green chiles, cumin, white beans, and chicken. This hearty meal is topped off perfectly with cheddar cheese and a dollop of sour cream to compliment the heat from the spices perfectly. We’ll be serving this soup now through May 12th.

How to Pack a Punch with Passion Fruit

While cruising through the aisles of my favorite local Asian grocery store, I spotted a handful of fresh passion fruit–a fairly uncommon occurrence.  At first glance they didn’t look how I expected them to look, but once I cut them open one of those “ah-ha!” moments occurred.  Now that looks like a passion fruit!  If you haven’t cooked or baked with passion fruit before, you are really missing out. It’s an incredible ingredient and I’ve never heard anyone say they didn’t like it.  The flavor is intense and tropical, which means you don’t need a lot of it to pack a punch.

recipe: dalmatian bars

As much as I love cookies, I have been totally drawn to bars lately.  Maybe it’s because I’m lazy – it’s way faster to make a batch of bars than it is to make a batch of cookies – but I think I actually like them more because there is more of the soft center.

These bars – full of chocolate flavor, are spotted with white chocolate chips and macadamia nuts.  That’s where you get your dalmatian spots!  They only take minutes to throw together, and so you’ll be enjoying the fruits of your labors in no time at all!

Mini French Jams

One of my favorite things to gift a friend or neighbor is a paper bag full of homemade rolls (or muffins) and a mini, French jar of jam.   These sweet little jars of confiture are as charming as charming can be with their gingham lids and French script labels; and since they are made of glass, they are reusable, making them an even better gift!

recipe: mango tangelo smoothie

I can never enough fruit smoothies. This one is especially creamy and sweet, a little mango, a little tangelo, and a lot of health benefits. With a boost of Vitamin C, Vitamin A, flavonoids like beta-carotene and alpha carotene, Iron and Vitamin B6 (all contained in the three main fruits in this smoothie), you’re sure to have a great day when you start it with this creamy treat.

You can even add a handful of spinach, kale or wheatgrass to change the color and give it an even greater boost of health.

Strawberry Ricotta Scones

Happy Friday! I love making special breakfasts on weekends. During the week, I eat oatmeal every morning, but Saturdays and Sundays are meant for splurging. I am talking about pancakes, French toast, waffles, muffins, and scones. We are always mixing up our breakfast menu. I am currently loving these Strawberry Ricotta Scones. They are easy to make and perfect for spring. Strawberries are so good right now and I bet you can even find them on sale.
