test kitchen: irish stew

We enjoy the opportunities we have to create recipes that coincide with a holiday.  St. Patrick’s Day is known for wearing green, pinching and our favorite…Irish Stew. We worked on getting the ratio of potatoes, cabbage and vegetables just right to create this hearty recipe.  It was important to us to implement as much authenticity in this classic Irish dish as possible.  After a good amount of research (and taste testing) we came up with a Zupas version that is sure to please.  Celebrate your St. Patrick’s Day with a bowl of our new Irish Stew.

test kitchen: french onion soup

Back by popular demand…This recipe required several different versions until we got it just right…and boy did we. I was not sold on this soup until the last revision…now I can’t wait to have a bowl for lunch tomorrow! We spent weeks altering the amount time we cooked the onions, trying different cheese varieties on the crouton, and getting the broth base perfectly balanced. We put a lot of “love” into this recipe and I think you will be able to tell. In addtion to a delcious bowl of full flavored soup, each serving will be topped with a heaping amount of asiago cheese and 2 croutons that have been toasted with olive oil and asiago as well. Valentines Day is the perfect excuse to have a classic bowl of French Onion soup. Stop by for a bowl at any of our locations this week and let us know what you think!

This hearty bowl of chili is filled with a variety of beans, spices, and fresh vegetables. Top it off with cheddar cheese and you have a perfect lunch or dinner on a chilly day.

When we set out to create our new German Sausage & Potato recipe we envisioned a creamy soup rich with texture & the perfect balance of spice. The simple yet satisfying flavor of the potato is the star ingredient of this recipe complimented by spicy sausage and scattered with petite peas. It’s a rare occasion that we get the recipe just right the first couple of rounds of testing, but it did not take long for us to fall in love with this recipe.  Our German Sausage & Potato is everything you want in a winter soup.

Our new Shrimp & Corn Chowder is a recipe to be reckoned with. The creamy consistency combined with all of the fresh vegetables and unique spices make this chowder the perfect answer for lunch or dinner. After finishing the recipe the first time, we went back to perfect it even more. All it took was one secret ingredient that took this recipe from good to great. To seal the deal, top this chowder off with bacon crumbles. Available at all of our stores November 23rd - December 5th.

Our new Brazilian Shrimp and Rice is one of those soups that you won’t get anywhere else. A Zupas orginal, we spent a lot of time perfecting the spices and determining the right balance of fresh vegetables and shrimp. The rich flavor and unique pairings in this soup make it unique and intriguing. To give it the perfect tropical touch, we added coconut milk and rice. We are anticipating that this week we will be making extra batches of this new recipe. It was a hit in the test kitchen and do not doubt that you will feel any different. On a scale from 1-10 this featured recipe is an 11.

Our creativity was put to the test with our newest featured recipe.  One taste of our Caribbean Pumpkin & Coconut soup and you’ll anxiously be waiting to finish off the entire bowl. This unique and inventive combination was an effort to recreate a soup we had in the Caribbean. It took a few different methods, adding & subtracting ingredients and perfecting the spice combination, but eventually we got it just right. We’ve been at it again in the test kitchen at Cafe Zupas. To offset the chilling temperatures this week, enjoy a warm bowl of Swiss Onion Soup. We spent days getting the creamy consistency just right along with pairing simple yet satisfying spices to create the perfect bowl of soup for a cold day.
